Noel's activities encompass the entire product manufacturing process, which is carried out following stringent quality control standards: from quartering through to slicing fresh products, the preparation of cooked and cured hams, charcuterie, sliced products, ready meals...


From controls identifying the breeds of our animals by means of genetic marker analysis through to the packaging of sliced products in protected atmospheres, all our processes are monitored and carried out with controls and technologies that guarantee the quality, standardisation and safety factors that characterise our products. Traceability at every stage of the production process is guaranteed by a centralised computer system. This system goes even further, preventing human errors by following and controlling the flow of materials and machine and labour times. Online monitoring is a constant factor. The main monitored variables are: weight, temperature, humidity and water action, pH, absence of foreign bodies, hygiene conditions of surfaces and atmospheres, compliance with the technical specifications of raw materials, genetic suitability of animals, control of vacuum packing and protective atmospheres of packaged products, etc.
