| The value of the Foundation |
The Fundación del Jamón Serrano is a private institution. Its mission is to watch over the quality of the hams manufactured by the member companies. Pursuing this objective, the Foundation created the Fundación del Jamón Serrano seal.
This seal benefits the whole sector (manufacturers, merchants and consumers). The Foundation:
Promotes the knowledge and consumption of cured ham
Guarantees the maximum quality of the product
Accredits all those cuts distinguished with the seal
Pursues and denounces the fraudulent use of the name of Jamón Serrano

Only those cuts that comply with a set of minimum requirements may use the Jamón Serrano denomination and only these, in turn, can be distinguished with the Foundation's seal. |

| The Fundación del Jamón Serrano seal |
This seal makes it very easy to identify those hams that have undergone a certain production process that complies with premium quality specifications.
Thus, the Foundation's seal becomes a useful instrument for clarifying the market and avoiding unfair competition.
To further enrich and clarify the offerings for the consumer, the Fundación del Jamón Serrano has established 3 product qualities.
Gold quality: hams cured between 11 a 14 months.
Silver quality: hams cured between between 8 a 11 months.
Gran Serrano quality: hams cured during more than 14 months.

Traditional Speciality Guaranteed is a recognition that the European Commission awards foodstuffs prepared with traditional means of production.
Jamón Serrano was the first Spanish product honoured with this seal, which gives the consumer valuable information about the product. It is also a necessary condition for obtaining the Foundation's seal.
