The Consorcio del Jamón Serrano Español is the Association that has grouped together the main producers-exporters of Serrano ham in Spain since 1990.
The Consorcio focuses on one concept: Quality.
This basic principle is what governs every action we take, and it has been this way for years.
The Consorcio has a dual remit:
- The promotion of high quality Serrano ham in international markets
- Quality control of the hams produced by its members
For us, the most important consideration is to satisfy the consumer. This is not an easy challenge, and therefore we have set up a quality assurance system that is based on precision and continuous improvement.

We want consumers and food industry professionals the world over to perceive the Serrano ham endorsed by the Consorcio as the ultimate expression of reliability, of satisfaction in things well done, of an excellent product.
Only a limited number of hams are therefore able to bear the exclusive seal of the Consorcio.
These hams must not only comply with European regulations (T.S.G. "Serrano" ham), but also they must always be produced in Spain, using Spanish raw materials selected to yield high quality hams and following strict manufacturing processes.
Time is also very important to us, and therefore no ham will receive the Consorcio endorsement if it has not been cured for at least 9 months.
But time is not the only factor: temperature and humidity, salting, the fat content of the pieces and their handling throughout this time are also strictly controlled through a quality control system backed by ISO Standards.
Finally, specialists individually inspect each ham in order to ensure that it complies precisely with our quality standards.
