Spelt, squid, orange and chorizo sausage

Step by step:

1. Leave the spelt to soak overnight and, in the morning, drain the water and cook it until it is tender. Cut the orange into segments, removing the peel covering them. Pour any spilt juice into a cup and keep it for the dressing. Cut the onion julienne style. Slice the tomato. Sauté the chorizo for a minute. Cut the squid into thin rings and sauté them for 1-2 minutes. 2. Prepare the seasoning by mixing the ingredients, adding the orange juice and stirring. 3. Place the spelt on a plate and then the onion on top, segments of orange, tomato, chorizo, squid and sorrel leaves. Pour the dressing on top and serve.
